Cracked Wheat Blender Pancakes


Cracked Wheat Blender Pancakes
1 c milk (I use nonfat)
1 1/3 c whole white wheat kernels
2 eggs
1 T sugar
1/4 t salt
1 T Canola oil (actual recipe calls for 2)
1 t baking soda
2 t baking powder

Pour milk and wheat into blender and liquefy for 4 minutes. Meanwhile add the egg, sugar, salt, oil, and baking soda. When it is almost done add the baking powder. (Sometimes when I turn it off the baking powder hasn't mixed in yet, so I give the whole thing a few stirs with a butter knife.) Cook on a hot griddle. I make about 5 5in pancakes.
